            Chenopodium quinoa Willd.

White Quinoa, is a herbaceous plant of Chenopodiaceae family (family of beets and spinach ...). It has been cultivated for over five thousand years in some countries of South America, especially on the "Andes" (mountains that characterize the western part of South America). The plant produces a spike (called panicle) on which develops its roundish seeds.
Due to its high content of starch, Quinoa
looks and it is used as a cereal, (it is a fake cereal)
Its small seeds are white, as the rice is naturally gluten-free, suitable for special diets, people with gluten intolerance. The white Quinoa is rich in vegetable protein, it contains the essential amino acids (Phenylalanine, isoleucine, histidine, leucine, lysine, methionine, threonine, tryptophan, valine), namely those that the body is unable to synthesize. The mineral content of Quinoa seeds is remarkable: magnesium, iron, zinc and phosphorus are present, Quinoa contains a lot of fiber, vitamin E, vitamin B and C with antioxidant power.

From the traditional stone milling of white Quinoa seeds you can obtain a very fine and soft flour that you can use to prepare baked goods such as cakes, pies, muffins, biscuits, crepes. With this flour you can prepare: bread, pies, focaccia and pasta, mixing with the rice flour, or with Black Venus rice. To get a good result in these preparations is advisable to mix the Quinoa flour with a wheat flour or spelt.

Curiosity: varieties of quinoa in the World

In nature it has been identified about 200 different varieties of Quinoa. The most used variety is the Quinoa Real characterized by low levels of saponins. Other varieties are: Bear, Cherry Vanilla, Gossi, Rainbow, Temuco, Cochabamba, Kaslala, dave 407, Isluga, Kcoito, Linares, Red Lighthouse, Red head, etc ...

2013 International Year of Quinoa
2013 was declared, by the Assembly of the United Nations

2013 Year of Quinoa by the United Nations. This is to emphasize the great efforts by indigenous Andean people, in the cultivation and preservation of Quinoa. The goal is to show to the world: the significant nutritional value of Quinoa, the fight against poverty of the people involved in the production of Quinoa.

White Quinoa can be used in the preparation of dishes, both sweet and savory, as its distinctive flavour can accompany different tastes.

Methods of use of Quinoa in the kitchen:

Weigh the amount of Quinoa to cook (as a measure you can use a full cup of dry quinoa coffee per person) and wash, rinse well under running water, this will remove the saponins, natural bitter compounds present on the outer grains. Drain the Quinoa washed in a colander and prepare a pot to boiling with about 1.5 liters of already salted water.
When the water boils pour the Quinoa and cook it for about 9-10 minutes, taste it, when it is cooked, drain it in a colander as regular pasta.
In another pot prepare the boiled rice, preferably brown rice, when cooked, drain it and add to the rice already cooked quinoa; mix well add the grated Parmesan cheese and the dish is ready on the table.
The seeds of white Quinoa can be used for salads, soups, risottos ...
The seeds of Quinoa Allowed to also be used "as is" in baked goods (eg. Cookies) or until the raggiungimneto a percentage of about 5%.


Quinoa seeds are free of preservative agents, store in a cool, dry place before and after opening the package.

Recipe with Quinoa seeds and aromatic italian rice
INSALATA DI QUINOA MEDITERRANEA con riso Aromatico FRAGRANCE
INGREDIENTS: (for 4 servings)
  • 250 gr of Carnaroli crespiriso rice

  • 80 gr of Quinoa bianca

  • one zucchini

  • a small eggplant

  • Half white onion
  • salt and pepper to taste

  • fresh basil to taste

  • Extra Vergin oil to taste

COOKING TIME:
18-20 minutres
PROCEDURE:

In two separate pots boil Quinoa seeds and rice already-washed respecting cooking times on the label. Prepare the vegetables: wash them, dry and cut them into cubes. In another pan, toast the onion with a little of Extra vergin olive oil; then, add the eggplant and zucchini. Cook together for 10 minutes, then add the basil leaves cut into julienne strips. Let cool: combine all ingredients and stir with a spoon of oil extra virgin olive oil and a sprinkling of pepper!
