A Semifino or medium (short-grain) rice, old, born in 1937 from a very lucky cross: Vialone  x Nano, japonica variety. Pearl Rice, has a very extensive pearl that has the capacity to absorb any seasonings you want and to greatly increase its volume.

Vialone Nano rice is suitable for high class risotto, but is also known for its good combinations with meat and fish, very tasty is also the Vialone Nano rice salad...


The Vialone Nano CRESPIRISO become from the best italian rice selection by Pacifico crespi, it has always worked crisp, fresh, fragrant, almost on demand...

Rice is devoid of preservative agents, store in a cool, dry place before and after the opening of pack.

RECIPE ->RISOTTO ALLA PILOTA

Typical Risotto from Mantova town and perfect for the big and the only Vialone Nano rice, only this rice can guarantee you an excellent result for this dish of Venetian tradition.

PILOTA comes from the name of the operators involved in the rice-husking called "piloti" of the plant, who revel in the preparation of this dish, still very common in that area of Italy.



RECIPE WITH Vialone Nano RICE
RISOTTO ALLA PILOTA
INGREDIENTS: (for 4 people)
- 380 g of Vialone Nano rice
- 0.4-0.5litre of water
- 250 g fresh pork sausages
- 90g of grated Grana Padano cheese
- Extra virgin olive oil
- 65 g butter
- Dry white wine to taste
- Salt to taste
COOKING TIME:
20-25 minutes
COOKING PROCEDURE:
- Boil a volume of water equal to the volume of rice (0.4-0.5l per 380g of rice), salt water, add the rice in one layer, pour the rice into the water using a
normal funnel positioned above the center of the pot.
- After cooking for 12-14 minutes in boiling water, without stirring, immediately turn off the heat and cover the pot with a cotton cloth which is interposed between the pot and its lid. Let the pot closed with the cover and the cloth for 15 minutes.
- Preparation of risotto dressing (while the rice is boiling in water): fry lightly in butter and a tablespoon of extra virgin olive oil, bathing with half a glass of white wine the fresh sausages well crumbled until they
appear browned.
- Uncover the rice, stir and add the sausages cooked before, add half of grated Grana Padano cheese, stir well, then, add the other half of the grated cheese and serve hot.
